The Copper Onion is one of my top 5 favorite restaurants. Since I'm still crippled thus not cooking as much these days, there's been excessive dining out and take-out between electric shopping cart rides at Walmart and Costco ;) I took brother Brian here to show off Salt Lake City. Located right next door to the Broadway Theater downtown, The Copper Onion is easy to get to with plenty of metered parking in front (so bring your quarters!). The veggies are always fresh, beautiful, crisp and the pasta is always home-made and al dente—outrageously delicious!
Snap Peas, fresh horseradish. Crisp and tangy, perfectly seasoned. Get this!
Sauteed Spinach, cashews, raisins. The cashews were wet and soft (vs hard and crunchy) and the raisins explode with flavor. I'm totally making this at home.Ricotta Dumplings, thyme, lemon. Flavorful, gooey center, candied lemon rind.
Pasta Carbonara, house-made fettucine, egg, niman ranch smoked bacon, cream. This is my absolute favorite pasta dish! Ridiculously chewy noodles, sickeningly rich yolky yolk, crisp salty bacon. So simple, yet intensely complex.
Mussels, creamy black pepper sauce, toast points. We put the giant toast aside completely. The mussels were plump and juicy and the sauce was a subtle lemony broth. Roasted Cauliflower, anchovy cream, capers. The capers added a nice but unnecessary kick and the anchovy cream was spiced with lots of lemon. (FYI, Brian preferred it sans sauce.)
Shishito Peppers, olive oil, sea salt. More of a beer food, this was light and kicky. Sweet finish.
